Grilled Rum Peach Salad

  

-          4 fresh peaches - halved and pitted

-          2 tablespoons dark rum

-          1 tablespoon light brown sugar

-          1 teaspoon nutmeg

-          1/2 tablespoon olive oil 

-          1/2 cup extra virgin olive oil

-          1/4 cup apple cider vinegar

-          3 tablespoons pure honey

-          2 teaspoons dijon mustard

-          kosher salt

-          8oz  fresh baby spinach or mixed greens

-          1/4 small red onion  - thinly sliced

-          1/2 cup feta or blue cheese - crumbled

-          1/2 cup pecans or walnuts-toasted and chopped

-          fininshed with cracked black pepper
